In this blog post, we will take you on a fascinating journey through the production process of a special wine produced from grapes grown in  particularly suited vineyards in Gaville (Florence) and the high-density vineyards in Chianciano/Montepulciano (Siena).

How are the grapes transformed into wine?

The transformation of grapes into wine is a meticulous process that requires expertise and precision. At the vineyards, the wine makers ensure that only the finest grapes are selected for vinification. The grapes from each vineyard are fermented separately in individual tanks, allowing us to preserve their unique characteristics. The fermentation process is carefully controlled at a temperature of 25-29°C (77-84°F) and includes maceration on the skins for 10-15 days.

What happens after fermentation?

Once the malolactic fermentation is complete, the separate crus are skillfully blended together. This blending process allows us to create a harmonious and balanced wine. The wine is then transferred to small oak barrels, where it undergoes a long aging process. The oak barrels impart subtle flavors and aromas to the wine, enhancing its complexity and depth.
